Food poisoning is an acute illness, which usually occurs within 1 to 36 hours of eating contaminated or poisonous food. Symptoms normally last from 1 to 7 days and include one or more of the following: abdominal pain, diarrhoea, vomiting, feeling sick, fever, dehydration and collapse. Every day thousands of people in the U.K. suffer from food poisoning. Many of these will be very ill and some of them will die. Those most at risk include the very young, the elderly, persons who are already ill or recovering and pregnant women and their unborn babies.

Food poisoning is seriously under reported and it is estimated that the actual levels are around 15 times greater.

The main reason for food poisoning are negligence, ignorance, poor management and a failure to implement good hygiene practices. Food poisoning can be prevented by developing a good food safety culture in all food businesses. This involves good supervision and the instruction and training of food handlers. The Food Safety Course will provide the food safety knowledge required by food handlers to reduce complaints and the risk of food poisoning.

All delegates attending the course will receive a professionally bound Highfield ABC Food Safety Book and if they pass the course they will also receive a certificate valid for 3 years.
